I just love mini desserts! First of all they’re so cute and fun to eat. I always love a smaller rendition of the larger traditional dessert. Secondly, they’re extra little which allows for a lot of sampling. You’re not stuck with one large piece of pie, which is never a bad thing. I love eating pie no matter the shape, but its nice to mix it up a bit!
It’s finally November and all I’m thinking about is Thanksgiving dessert. I’m in charge of it every year. In the past I’ve made gorgeous cakes, cookies and other fancy desserts, but the pie always beats out the competition, by a long shot, so this year it’s all pie. Nothing but pie. I don’t like making desserts no one eats. It makes me quite upset, so I’ll cater to the crowd.
This year I don’t want to make the traditional 9” pie either, so I’ve decided to make mini pies. They’re so extra cute and everyone can take a few and munch on several flavors at a time. I always get so excited when dessert rolls around. Don’t get me wrong, I love the turkey, mashed potatoes and stuffing, but I live for dessert. I could be stuffed to explosion, but if dessert is being served, how can I pass that up? I always have room for a sweet ending or two!
Mini pies are quite easy to make. I found these really cute 3” pie tins on amazon. They’re seriously the cutest tins ever! Make some pie dough, or buy pre-made if you’re not into making it. They both work great. To make it easy, get a round cookie cutter to cut out circles of dough. I used a 4” cutter for the 3” shell. It was perfect. Simply roll the dough out to about 1/4” thick and cut your circles. Line the pie tin and crimp your edges. Use immediately or you can definitely make ahead of time, wrap tightly and freeze until you’re ready to use. When you’re ready for some pie, just thaw, fill with desired filling and bake.
I chose to make pumpkin, pecan, and apple mini pies. The pumpkin and pecan fillings are fairly quick to make. Just mix all the ingredients together, fill your crusts and bake.
The apple took a bit of work, but totally worth it. Peel the apples, slice, and make the filling. You can totally buy canned filling to make things faster and easier if you’d like. I also like to put a lattice on the top of my pie to make it cute and pretty. Cut strips of pie dough and criss-cross. I did three strips one way and three strips the other. Then I baked them till they were golden brown and delicious. Ahh, they’re the best when they’re still warm. It will definitely make you smile and make your day better! Make sure you enjoy one! Each recipe made about 9-10 mini pies. I used my normal recipes, but halved them and it made the perfect amount!
Don’t get intimidated. Mini pies are really quite simple to make. They make for a great presentation and sweet ending to any Thanksgiving celebration or get together. When you have some free time make your dough and shells. Freeze. Then right before Thanksgiving make your fillings and bake to perfection. Your guests will be amazed.

Below are the recipes for the pie fillings. Each makes about 9-10 mini 3” pies. Double the recipes and they will each make a delicious 9” pie.
Pumpkin Pie Filling
This is a traditional filling that is sweet, delicious and smooth.
- 1/2 Can Pumpkin Puree
- 1 Cup Milk
- 1 Cup Brown Sugar
- 1/2 tsp Cinnamon
- 1/4 tsp Nutmeg
- 1/4 tsp Ground Ginger
- 1 Each Egg
- 1 Tbsp Flour
1. Mix together all ingredients until incorporated really well
2. Pour into prepared mini pie shells about 3/4 full.
3. Bake at 350F for 40-50 minutes or until a knife comes out clean
4. Immediately serve warm or refrigerate until ready to serve.
Pecan Pie Filling
So sweet, so delicious. This traditional pecan pie filling is perfect for the holidays.
- 1/2 Cup Brown Sugar
- 1/4 tsp Salt
- 1/2 Cup Corn Syrup
- 1/2 tsp Vanilla
- 4 Tbsp Butter Melted
- 1 Each Egg
- 1 Cup Pecans Chopped
1. Distribute chopped pecans evenly among mini pie shells.
2. In bowl, add rest of ingredients and mix until fully incorporated.
3. Pour mixture over pecans until shells are 3/4 full.
4. Bake at 350F for 40-50 minutes or until knife comes out clean.
5. Serve immediately warm or refrigerate until ready to serve.
Apple Pie Filling
The perfectly sweet, extra delicious filling for the best pie!
- 1/4 Cup Unsalted Butter
- 1 1/2 Tbsp Flour
- 1/2 Cup Packed Brown Sugar
- 1/8 Cup Water
- 1/2 Tsp Cinnamon
- 1/2 Tsp Vanilla
- 4 Each Granny Smith Apples Cubed
1. Peel and cube apples. Set aside.
2. In saucepan, melt butter. Add flour to form a roux. Cook for about 1 minute constantly stirring.
3. Add sugar, water and cinnamon. Bring to a boil then reduce heat to low and simmer for 5 minutes.
6. Turn off heat and add vanilla and apples. Mix together until fully incorporated.
7. Fill pie crusts and cover with lattice. Bake at 350F for 40-45 minutes or until golden brown.
8. Serve immediately or refrigerate until ready to serve. Enjoy!
